Sardinian sheep milk, cheese that contains live insect larvae is also called Casu Marzu.  Casu Marzu goes beyond the fermentation stage to a stage called decomposition which is brought about by the digestive action of the larvae of the cheese fly. These larvae are introduced to the cheese, promoting fermentation and breaking down of the cheese's fats. The texture of the cheese becomes very soft, with some liquid seeping out. The larvae are seen as translucent white worms, about 8 millimetres (0.3 in) long. Some people clear the larvae from the cheese before consuming while others do not.

Simultaneously, the meat is heated from outside with a gas burner to remove hair and also to roast the meat. This process must be handled with care and expertise. The temperature of stones and the amount of heat from outside must be well balanced because if not, a lot of pressurized vapour will accumulate inside the meat and it may blow up. A hearty stew is usually formed inside the goat. It is separated from the meat and put in a pot.
 Usually, no vegetables are cooked together with meat.
